Coffee overview

A rare processing technique for Kenyan coffees lends this lot a very bright and complex acidic character, bouyed by sweet dark fruits and juicy yuzu. The Mahiga Factory comprises 400 smallholder members and is part of the umbrella Othaya Farmer Cooperative Society. Together they are part of the 4,000 member organizations of Kenya Cooperative Coffee Exporters (KCCE), whos goal is managing exporting operations without several in-betweens taking needed margins from farmers.

This coffee was fermented underwater for 12 hours, washed, then fermented for a second time for ~36 hours, followed by a last washing.

Recommended brewing

A very light roast we prefer with paper filter methods. Recommended brewing with low hardness water. As espresso, we taste abundance of citrus and tea-like notes.
