An extremely rare and small-lot offering from the legendary producer Juan Peña. Expect heavy, voluminous floral character throughout, punctuated by complex tropical fruits and citrus qualities. This coffee is extremely limited in quantity, and is only offered in 125g bags.

Rest: 30+ days recommended. This coffee is lighter than other ultralights on menu.
Filter eval day 1: Gabi Standard Recipe of 1:18 is overwhelmingly floral, with soft punctuations of tropical fruits throughout. This floral character never really dissipates at lower ratios, but more acidity can be brought out to bring balance to the cup. EY minning is quite fun, but this coffee needs adequate rest, perhaps beyond the 30 day recommendation.
Filter eval day 13: EY minning, 1:16 ratio with Kinu POB grinder boosted the tartness of the flavor profile to compliment the dominant floral character. Cup still shows quite fresh, and somewhat difficult to brew. 30+ day rest rec is holding true.
Filter eval day 32: EY minning, 1:16 ratio with Kinu POB grinder shows a well balanced cup that continues to exude dominant floral character. Superlative coffee with superlative florals. Just lovely.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
