A somewhat stupefying release from Finca Deborah, this washed Bourbon presents characteristics and notes quite unlike other Bourbons. Some citrus expectation is here; and great sweetness. But the cup is also quite floral, and the sweetness has some berry-like nuance that reminds of a natural process. Yet everything is starkly clean here. There is plenty to explore in this cup, and it will keep your tastebuds guessing.

Filter eval day 1: Gabi Standard Recipe of 1:18 shows a vexing cup by all accounts. Some sips are loud and pronounced starfruit and clear kiwi; other sips show subdued underlying berry-like and somewhat milky notes. Some sips show the sweetness as very soft. And a large amount of floral character exists in this Bourbon into the finish. I expect this cup to be very dynamic as it rests and different recipes are explored.
Filter eval day 34: This coffee continues to mystify with the development of additional notes: rose, ube, and yuzu. An EY min approach of 15:240 yields great sweetness and huge complexity among all these notes. A beautiful cup.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
