Panama Deborah Iridescence
Coffee overview
Last batch roasted 1/3/24- no more restocks
An incredibly transparent, clean, and floral offering from world-famous Finca Deborah in Boquete, Panama. This Gesha variety is the first in H&S history, and was chosen because it represents the variety in a very clear light. This coffee will transport you back through its life-cycle to the flowering stage. Expect heavy florals, superbly clean stonefruits, and a refreshingly light grape acidity. A light butter or milky body give this cup some weight despite its very light flavors.

Filter: This really comes down to personal preferences, higher ratios bring more florals, lower ratios bring more acidity.
Espresso: 20:70 turbo and similar high-ratio extractions are the most enjoyable way to taste through the floral character of this coffee.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
