From the highest elevation farm in all of Latin America, Iris Estate offers one of the standout Gesha offerings of the year. A unique process devised by Jamison Savage combines the berry sweetness of a natural process and the acidity and clean character of a washed. The hyperlight roast profile -- by far the lightest roast H&S has ever released -- transforms the vast availability of these notes into a symphony of floral expressions. Expect a full spectrum of floral notes representing subtle fruits, subdued acidity, and perfumed volume.

Filter eval day 1: Gabi Standard Recipe of 1:18 shows a veiled and subdued cup with varied and complex florals. Acidity is faint, sweetness is soft, and florals dominate. This coffee will need a great deal of rest to open up.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
