Honey processed Ethiopian coffees have been making a huge impression on us over the last few years, and this lot from Daye Bensa is no exception. A juicy and tropical experience awaits in this cup marked with huge intensity. This lot shows a stunning contrast to the other new Ethiopia, Habtamu Fekadu Aga, revealing just a slice of the diversity of Ethiopia.

Rest: 20+ days recommended
Filter eval day 1: Gabi Standard Recipe of 1:18 shows a very punchy, bright, and clean cup loaded with stonefruit and tropical fruits. This shows great promise for the continued resting of this coffee, as well as for different ratios and recipes.
Filter eval day 7: Gabi Gentle Recipe, 12:200, is hugely juicy and intense, showing a lot of tropical fruits. This cup is a bit messy but the intensity cannot be denied. Showing some pineapple vibes.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
