A first for H&S as we bring in this lively washed Red Catuai from producer Yulissa Chambi. Exceptional processing here presents this variety in a clear light, with plenty of bright, tart notes to contrast with a syrupy finish. Another beautiful, straightforward washed offering.

Rest: 15+ days recommended
Filter eval day 1: Gabi Standard Recipe of 1:18 shows an expressively bright cup loaded up front with tartness, barely diminishing into the finish. The notes are clean, but the separation is a bit too much for this coffee and the finish can present with generic sugar with some dryness. Recommended to lower ratio and try Gabi Gentle (12:200) recipe or similar.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
