Thinking on a recent discussion of the 'ceiling' of a different origins, we find ourselves constantly looking for coffees that exemplify their origin and as such, trying to raise that ceiling with our work. This coffee highlights some of the best attributes of Brazil: high sweetness and creamy mouthfeel, along with superb jammy character reminiscent of your favorite jams and jellies. This is an easy-drinking and accessible coffee. Will it change your opinion of Brazil? The characteristic Brazil terroir is here, but the sublime jammy sweetness may turn your head.

Filter eval day 1: Gabi Standard Recipe of 1:18 shows a well-balanced cup with hallmark Brazil markers, namely a nutty, smooth finish. On top is very jammy fruit, which is well-defined and very sweet.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
