Producer Ernedis Rodriguez once again graces the H&S menu with a beautiful washed Caturra field blend. This coffee is clean as a whistle, and presents a very sweet cup. El Paraiso comprises 14 hectares, 7 of which is natural forest reserve. Ernedis mostly grows Caturra, but you will also find Sidra, Bourbon, and Colombia varieties here. This is the 4th year H&S has purchased from El Paraiso, including a past Good Food Awards winner.

Filter eval day 1: Gabi Standard Recipe of 1:18 shows this coffee in a clear light without a breakdown in finish, indicating a near-ultralight profile. However, more fun is to be had at lower ratios, 1:17 shows increased sticky sweetness and texture that compliments the notes well.
Filter eval day 13: Gabi 'gentle' recipe of 12g dose, 200g water shows a thick mouthfeel, ice-cream-like, alongside characteristic fruity Caturra notes. Lovely balance here at this ratio, easy to brew and enjoy.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.

Process details: Ripe cherries are floated, de-pulped, and dry-fermented for 84 hours. Coffee is then washed and dried in a greenhouse until reaching target moisture.
