Filter eval day 1: Gabi Standard Recipe of 1:18 shows a delightfully clean, well separated and intense cup that finishes sweet. Lower ratios will ramp up the intensity. This one is fun every which way.
Filter eval day 13: Intensity abound in this sterling clean cup. Juicy, tropical, and lively. Showing a tea-like finish which indicates a still-too-fresh-cup, this coffee may need more than 20 days rest. All brew methods are presenting well.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.

Process details: Ripe cherries are depulped and fermented in sealed barrels for 5 days. The parchment is then washed and dried on raised beds until reaching target moisture.
