Carlos Ramón Díaz is another new-to-us producer, his farm is also named La Esperanza and is located in Pitalito -- not to be confused with our other La Esperanza offering, we have named this release "La Esperanza 2." Also a washed Pink Bourbon, this lot offers a sparkling lime acidity along with a candied and tactile sweetness. We've profiled this to a light roast, pushing the sweetness in this cup further.

Filter eval day 1: Gabi Standard Recipe of 1:18 shows a predominantly citrus laden cup dominated by lime acidity and tartness, giving way to the hallmark pink bourbon sweetness, which presents itself as pink starburst and sugary marshmallow. A slightly heavy cup.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
