The crescendo of La Papaya season is upon us with our first ever Reserve series release. La Papaya Reserve is a special designation; it entails extra dedication to lot separation and processing to achieve the best possible outcome from one of the world's greatest farms. The cup resonates with this extra attention. Expect multi-layered candied fruit sensations, bouquets of florals, and a surprising tartness to explore in this deeply complex cup. "Fruit loops in a flower shop" is just the start. This natural process coffee carries no funk designator as it is extremely clean.

Filter eval day 1: Gabi Standard Recipe of 1:18 starts with a heavily floral fragrance. In the brewed cup, a push/pull between fruit loops candied fruits and sweet tarts candy provides a layered experience. The floral finish is also very candied and reminds of heavy florals such as violet. Some sugary cereal taste lingers on the finish, indicating this coffee is near hyperlight profile, and should be rested longer than other ultralights.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
