Coffee overview
Banko Taratu is our first Ethiopia release of 2025, and it is a fitting start to the season. It showcases the intensity of a double fermentation alongside the stunning complexity of a quality Ethiopian washed coffee. Classic Ethiopia notes are here, but slightly twisted. Look for sun tea instead of earl grey, chamomile instead of lavender, yuzu instead of bergamot. This fun and intense cup is just the start of Ethiopia season, so buckle up.

Filter eval day 1: Gabi Standard Recipe of 1:18 shows this coffee with a prominent sun tea note to start, with bright acidity revealing peach and bergamot notes that all intertwine throughout the sip. Some slight classic Ethiopia florality into the finish, but this cup is dominated by tea-like notes along with stonefruit and citrus.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
