Coffee overview
Rumudamo is one of the highest-elevation stations in all of Ethiopia, and consequentially, the beans in this lot are some of the smallest to be found anywhere. Produced by industry stalwarts Daye Bensa, this lot offers abundant ripe melon and pungent florals which provide one of the best Ethiopian experiences of the season.

Filter eval day 1: Gabi Standard Recipe of 1:18 shows a cup quite fresh, with unripe melon fruits leading into a strong chamomile finish. This one will need extra rest to open up.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
