A very unique and rare offering from Northern Peru, with production facilitated by Origin Coffee Lab. This SL9 variety offers somewhat familiar SL- type tartness, harmonized with the complexities that come from Peru. This cup goes beyond the listed notes with complexity and includes tart and tropical fruits, spices, and dynamic florals.

Filter eval day 1: Gabi Standard Recipe of 1:18 shows a dynamic cup full of complexity. Florals and spices are more present at this ratio. This coffee will be quite dynamic both across its resting period, and within the cup as it cools. Tartness, spice, and floral character can be modulated through the brewing recipe. Lovely.
Filter eval day 5: Gabi 'gentle' recipe of 12g dose, 200g water shows a nice tartness and tropical fruit sweetness. Spiced notes are decidedly more punchy. This coffee has quite a bit to explore.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
