Coffee overview
For as interesting as these notes are, this is one of the most 'tame' offerings we have released from Nestor Lasso. Lots of bright citrus and intense tropical fruit notes intermingle with savory basil, a bit of thyme perhaps, rosemary, and the rest of that Simon and Garfunkel song. There's a push and pull here, never settling in a single direction on the palate. As interesting as ever, sure, but don't expect pizza or negroni from this release. It's a bit more normal.

Rest: 30+ days recommended
Filter eval day 10: Gabi Standard Recipe of 1:18 shows a ping-pong of flavors across the palate ranging from intense key lime acidity to savory herbs, to sugary cereal. They come almost all at once, leaving the brain to decide the order. Fairly vexing, but not quite as weird as past Nestor Lasso releases.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
