An intense cup full of juicy fruits, this "boring washed Caturra" is anything but. Producer Jorge Rojas has refined his processing methods to a science. This lot was fermented once "held in cherry" before depulping and fermented again before continuing the washed process. This cup tip-toes into processing-forward notes but never really tips over.

Recommended brewing
Filter: The Gabi 'standard' recipe of 1:18 is a little too much for this coffee especially in the finish. We prefer a 1:17 ratio, slightly coarser grind that brings the notes together into a juicy package that finishes clean.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.

Process details: Ripe cherries are fermented in sealed steel tanks for 72 hours, de-pulped, and fermented again for 38 hours in the same steel tanks. Coffee is then washed and carefully dried between mechanical and greenhouse methods.
