Coffee overview
One of our longest tenured year-over-year purchases is this staple lot from Ernedis Rodriguez and his farm, Finca El Paraiso. A field blend consisting mostly of Caturra, but also including Sidra and Chiroso, Ernedis has once again produced a juicy and sweet lot which exemplifies Colombian coffee. This year, we are finding a cup dominated by citrus fruits, with excellent intensity and the typical clean character we've come to rely on from Ernedis. A consistently high-bar offering from one of our favorite producers.

Filter eval day 1: Gabi Standard Recipe of 1:18 shows a bright, punchy and intense cup with a clean finish. Meets expectations for this long-standing year-over-year purchase. Quite citric and slightly tropical.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
