Coffee overview

Producer Ernedis Rodriguez once again graces the H&S menu with a beautiful washed Caturra field blend. This coffee is clean as a whistle, and presents a very sweet cup. El Paraiso comprises 14 hectares, 7 of which is natural forest reserve. Ernedis mostly grows Caturra, but you will also find Sidra, Bourbon, and Colombia varieties here. This is the 4th year H&S has purchased from El Paraiso, including a past Good Food Awards winner.

Rest: 15+ days recommended

Filter: Gabi Standard Recipe of 1:18 shows this coffee in a clear light without a breakdown in finish, indicating a near-ultralight profile. However, more fun is to be had at lower ratios, 1:17 shows increased sticky sweetness and texture that compliments the notes well.

We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.

Process: washed
Process details: Ripe cherries are floated, de-pulped, and dry-fermented for 84 hours. Coffee is then washed and dried in a greenhouse until reaching target moisture.
