Coffee overview
As much as we love to establish systems at H&S that add routine and prediction to flavor outcomes, something always comes along to break the rules. In this case, with an anaerobic natural process, the expected outcome is certainly not peach iced tea. And yet, here we are, with a decidedly clean and refreshing cup that reminds most of a classic washed Yirgacheffe. This coffee is a delightful experience and belies its processing details. Expect a very clean, vibrant, and refreshing cup with very little indication that it is naturally processed, much less with an anaerobic step.

Filter: We are so far enjoying this coffee every which way. High ratio / high extraction cups present more black-tea / Earl Grey-like finishes, while EY minning smashes flavors together into a fun, punchy, peach iced-tea. Have fun with this one.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.

Process details: Ripe cherries are sealed in grainpro bags and fermented at increasing temperatures over 24 hours. Cherries are sorted for defects, fermented again for 2-3 hours, and transferred to solar dryers until target moisture content is reached.
