We're starting the new year with a beautiful washed Tabi from La Divisa estate. Tabi is an uncommon variety. It is a cross between Timor Hybrid, Bourbon, and Typica, and it offers the best of all these varieties: sugary sweetness, sparkling acidity, and complex floral and spice character. What better way to start the year than with a coffee that offers it all? This one offers tart acidity via the plum and citrus notes, biting grapefruit tanginess, and a broadly sweet, coating finish reminiscent of marshmallow.

Filter eval day 1: Gabi Standard Recipe of 1:18 shows a loud, intense coffee full of tartness and grapefruit bite. The sip finishes with soft and sweet marshmallow. This one promises to be a wild ride.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
