Colombia La Victoria
Coffee overview
This community lot comes from some of the highest reaches of Huila, named after a former association of these farmers. A Caturra field blend, this coffee offers an excellent balance of bright tropical acidity and sugary stonefruit sweetness. This is, in fact, one of the cleanest washed Colombias H&S has released this year.

Brewing evaluation
Rest: 15+ days recommended
Filter eval day 1: Gabi Standard Recipe of 1:18 shows this coffee has lots of legs, and can take you in many different directions depending on personal preference. Orange blossom & jasmine finish is floral and green tea-like. Balance is excellent.
Filter eval day 6: Gabi 'gentle' recipe of 12g dose, 200g water shows a sugary and syrupy cup with a lot of intensity and juice to it. Lower ratios may be the play with this one. A very clean and sessionable cup.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
