This lot is named for the collaboration between two farmers, Diego Horta & Edier Perdomo, whom both took the best Pink Bourbon cherries from their farms and combined them into a lot which celebrates this vaunted variety. Expect huge sugary sweetness to dominate this cup, complimented on either side by apple tartness and soft citric florality.

Filter eval day 1: Gabi Standard Recipe of 1:18 shows an abundance of sweetness layered between tropical, malic, and citrus tones. This coffee has an excellent foundation and will present an array of sweet and fruited notes with rest.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
