One of the most fun coffees from H&S Ethiopia season, this double-fermented washed offering brings a lot of intensity to the table where most washed offerings this year leaned subtle. Expect a very bright, punchy, and acidic cup loaded with citrus complexities.

Filter eval day 1: Gabi Standard Recipe of 1:18 shows a highly acidic coffee dominated by citrus expressions. The cup finishes abruptly with a prominent jasmine note.
Filter eval day 20: The Gabi Gentle Recipe of 1:16.7, 12:200 shows this coffee has tamed somewhat, but remains very bright and punchy. Yuzu and mandarin orange, into juicy green grape. The finish is the only thing that has softened here, turning the jasmine note somewhat sweeter.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
