Coffee overview
This Landraces lot was selected by Catalyst Coffee for experimental processing. Extended fermentation was carried out for 72 hours before traditional washed processing. This shows in the cup with heavier, darker fruits, reminiscent of notes found in natural processing. However, this coffee remains starkly clean and floral in the typical washed fashion.

Recommended brewing
Filter: A 1:17 ratio pourover nicely balances between clean character and dark fruit intensity.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
