This profile is comfortably traditional and focuses on a bevvy of stonefruit, citrus, black tea, and floral character. It is the perfect start to Ethiopia season -- a showcase of a profile that has defined Ethiopia coffee for many decades.

Filter eval day 1: Gabi Standard Recipe of 1:18 reveals a very clean cup with plenty of complexity and structure, and offers the most floral representation of this coffee.

Filter eval day 7: The Gabi Gentle Recipe of 1:16.7, 12:200 shows a coffee opening up nicely. The enhanced sweetness of this recipe is lightly stepping into cotton candy, and compliments the floral finish.

We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
