These gargantuan Pacamara beans dazzle in the cup, presenting well-structured expressions of juicy fruits throughout the cup. Different brew methods will present very different structures here, with a lot to explore in this intriguing coffee.

Filter eval day 1: Gabi Standard Recipe of 1:18 really separates the flavors in this cup, showcasing a lively amount of fruited notes with a distinctly bell pepper finish that is intriguing, to say the least. A very unique cup.
Filter eval day 7: Gabi 'gentle' recipe of 12g dose, 200g water really refocuses this cup, bringing the notes together and becoming syrupy-sweet, with a hugely intense cup. The bell pepper has all but faded away here, replaced by black cherry and a sugary pear finish. Lower ratios are definitely recommended here, unless you really want to pursue that spiced finish.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
