Panama Deborah Aril
Coffee overview
Our last Savage release for 2025, Aril combines a carbonic macerated natural step with a washed finish, providing an expansive stage for a range of flavor notes. Expect dark floral characteristics, jammy fruits and berries, and a tea-like hibiscus tartness into the finish. Roasted to a hyperlight profile, this coffee will require ample rest to unlock its potential. Be very patient with this one, and enjoy how it develops over time.
Coffee flavor profile
Violet, white strawberry, hibiscus.
Acidity: complex berries and florals, tart
Sweetness: juicy, slight tactile
Body: heavily floral
Brewing evaluation
Rest: 60+ days recommended
Filter eval day 30: Gabi Standard Recipe of 1:18 shows a cup finally opening up with exotic floral character, an array of berries and tropical fruits, and a clean, tea-like hibiscus finish. This one took quite a while to open up. It is very subdued florals until past the 30-day mark, at least, and perhaps longer.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
