This coffee comes from one of the most rugged environments for coffee cultivation on Earth, and the carbonic honey process honors these constraints while creating a dynamic stage to present this coffee. This coffee looks and measures like a fairly dark roast, yet the cup is bright, with many tea-like and floral characters. Characteristic Yemen black tea and a slight anise marker set the foundation for a befuddling tartaric and citrus acidity. This coffee is compelling in its uniqueness and will redefine what you think about Yemen flavor profiles.

Filter eval day 1: Gabi Standard Recipe of 1:18 shows a complex cup loaded with tea-like and floral components, with a shocking tart acidity up front. These beans look very dark, and belie the light character of this cup. The cup shows very bright character up front, and a heavy tea-like body on the finish, with light sweetness in between. A bit confounding.
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
