Coffee overview
Our last Ethiopia release of the season is also the sweetest. This washed lot from the Chelbessa One station is loaded with tartaric acidity and sweetness throughout the cup. From start to finish, expect tart upfront acidity and layers of dark fruit sweetness underneath. The finish is clean with some slight linger.

Filter eval day 3: Gabi Standard Recipe of 1:18 - Nicely balanced cup with predominant sweetness in the middle. Soft acidity, slightly tartaric, blending with the syrupy sweetness. Finish is clean, with some lingering sweetness. Very nice.
TDS: 1.4 EY: 23.26%
We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
