Limited release 125g only - Our first of three Yemen lots this year, this single-village lot represents a staple Yemen flavor profile alongside deliberate natural processing. The result is dark fruited, deeply sweet and complex flavors presented with surprising acidity and some tartness, finishing with a fair bit of black tea and some earthiness reminding of pu-erh tea. A wonderful start to our Yemen releases this year.

Filter eval day 1: Gabi Standard - Expected Yemen fare here, with dark fruits in the acidity and sweetness of this coffee and a very long, lingering, black tea and slight pu'erh earthiness. Many rich, dark fruits and their syrup/jam expressions are in here, with some nice tartness punching up.

We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
