Colombia José Giraldo Entre Montañas
Coffee overview
A wonderful set of coffees from producer José Giraldo's Las Marias estate. Same producer, estate, and variety; different plots and processing.
This plot is Entre Montañas, a Green-tip Gesha planting which was oxydator washed. It offers a brillant display of sparkling acidity, heavy rose-like florals, and an intriguing amaro finishing note. Significant complexities await in this cup. It is a more expressive and decadent cup compared to its partner lot.
Cardamaro is a wine-based amaro which offers winey, herbaceous, and dried fruit characters, and is light on the palate.
Coffee flavor profile

Brewing evaluation

Filter eval day 2: Gabi Standard Recipe of 1:18 - Reigned in on the processed character to this cup. Pretty sensational, heavy florals throughout, sparkling grape and amaro notes are playful and not overbearing. Excellent.
