Abel Salinas has become a mainstay here at H&S, and we look forward to his washed Typica Mejorado lot every year. This season he has produced a lot of subtlety: soft stonefruits, an abundance of florals, and an unmistakable chamomile presence. This is an interesting departure from his previous efforts, and we've leaned into it with the profile on our new Roest P3000 production roaster.

Filter eval day 1: Gabi Standard Recipe of 1:18 shows a prominent chamomile note throughout this brew from aroma to sip, surrounded by soft stonefruits and florals. An interesting start.
