

Ethiopia Habtamu Fekadu
Coffee overview
Habtamu Fekadu Aga has had a prolific year. I have seen his name all over many excellent releases from other roasters, and I think he was able to get a lot of his produced coffees through the mills and exported earlier than many others this season (my understanding is he owns and operates this particular station in Guji). So it is no surprise we are releasing his work first for Ethiopia season. This washed lot comes from the Goro washing station in Guji, and was further dry milled at the Kuri Mountain dry mill in Addis. It is a staple Guji washed lot with a broad range of stonefruit and floral characteristics. Sweetness, body and texture are turned up with this release as well; it was roasted on our faithful Diedrich IR-12 which has handled beautiful washed Ethiopian coffees for 13 years. I've found the IR-12 profile to greatly boost complexity in this cup through its texture. It's presenting darker than the last several Roest releases, to still-not-quite a regular light roast profile.

Filter eval day 2: Gabi Standard Recipe of 1:18 - Lovely day 2 eval off the drum. The cup is heavier than what I've been tasting lately, with more presence of sweetness in the cup adding to the overall complexity. A more acid/sweet balance than what we've been putting out the last few months. Very nice change of pace to introduce Ethiopia season.

We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
